Easy Sauteed Spinach

Ingredients

  • 2 to 3 large handfuls of fresh spinach

  • 2 tablespoons olive oil

  • 3 garlic cloves, sliced

  • salt and pepper to taste

Instructions

  1. Clean and prepare the spinach. Cut off the thick stems and discard. Clean the spinach by filling up a bowl with water and soaking the leaves to loosen any sand or dirt. Drain and repeat. Put the spinach in a salad spinner to remove excess water or dry between two towels.

  2. Heat 2 tablespoons of olive oil in a large skillet on medium heat. Add the garlic and sauté for 30 seconds, until the garlic begins to turn brown.

  3. Add spinach to the pan. Pack it down a bit if you need to. Use a couple of spatulas or tongs to lift the spinach and turn it over to coat in the olive oil and garlic. Do this a couple of times.

  4. Cover and cook 1 minute. Uncover and turn spinach over again. Cover the pan and cook for an additional 1 minute.

  5. Remove from heat and drain excess liquid from the pan. Spinach should be wilted, but not mushy. If desired, add some extra olive oil. Sprinkle with salt and pepper to taste. Serve immediately.
